Eau de Vie de Cidre 1948
This eau-de-vie was distilled in 1948 and then aged
in an oak barrel until its bottling in 2005.
Superb and rare, this eau-de-vie is in fact a
Calvados too, but because of administrative issues
back in 1948, they couldn't name it "Calvados".

Calvados Christian Drouin - Its production and prizes
The apples

Around 30 varieties of apples are used for making a Calvados - or "Calva" as we say here - in order to obtain the perfect blend of sweet,
bitter-sweet, bitter and acidulous apples. The Drouin orchard is planted only with traditional low-yield varieties of apples, carefully selected to
ensure a good balance between the four types of apples. The apples are harvested simply by shaking the branches. They fall on large canvas
where they are picked up by hand placed in sacks before being stored.
The mashing

All the apples used for the Calvados Drouin are equally mature for a better mashing. A grater (a multi-knives tool) change the apples into a sort of
pomace which rests for a few hours in order to soften before being squeezed by an hydraulic press composed of wood racks.
For the Drouin Calvados, only the pure juice is extracted. The pomace is squeezed only once and the yield does not exceed 65%. The juice is
then stored in old 50 hectolitres Norman casks until it’s fully fermented. All the sugar contained in the apples has to change into alcohol before
it can be distilled. The casks can be used for a very long time if they are carefully cleaned each time, the oldest at Drouin is dated 1889.

The distillation

Drouin has 2 stills: an ambulant one, made in 1946 by its former owner himself, Pierre Pivet. It is composed of 2 wood-heated stills mounted on a
plateau and is probably the last double-distillation still still in working order.
Because of its limited capacity, a second still, Charantais style, had to be installed in the press-house.

The first distillation of cider gives the "petites eaux", an intermediate product with only 30% alcohol. The second distillation, called "bonne
chauffe", is achieved by re-heating the petites eaux. The Calvados collected from the still is 70% alcohol, biting and colourless, it now needs to
age.

The aging

Drouin Calvados is aged in oak casks which give its typical colour, aromas and character over the years. The Calvados storehouses feature almost
only small casks, 250 litres each, allowing more exchanges between the wood and the spirit for an acceleration of the aging process but also a
greater Angels’ share (evaporation) on the other hand. Most of Drouin’s casks were previously used for sherry and port. These re-used casks help
the Calvados to develop a fuller body, a greater complexity, a finer colour and bring less bitter tannins.
